OnePlus brings Android Oreo for OnePlus 5 with OxygenOS Open Beta 1
The OnePlus 3 & 3T are receiving the official Android Oreo update, and now OnePlus has kicked off Oreo beta testing for OnePlus 5, as it promised.
OnePlus has released the first public beta of the Android Oreo-based OxygenOS Open Beta 1 for the OnePlus 5.
There is no OTA available, so the Oreo beta build have to be manually downloaded from OnePlus website, and flashed to your OnePlus 5 unit. Once you're on the beta path, future Oreo beta builds will be rolled out over-the-air. Do note that you'll no longer receive regular official stable OTAs, once you are on beta build.
Also do keep in mind, since this is a beta build it is not stable as the official OTA, and you may encounter some bugs which is likely to create problems in the day-to-day use for your phone. If you still want to proceed you can refer the flash process here (Link).

As for the OnePlus 5T, the Oreo beta testing will begin in late-December. The official Oreo OTA will be out early 2018, first for the OnePlus 5, followed by OnePlus 5T.
